Tiger Nuts
Cyperus esculentus is a crop of the sedge family widespread across much of the world. It is found in most of the Western Hemisphere, as well as Southern Europe, Africa, Madagascar, the Middle East, and the Indian subcontinent (Wikipedia). It is actually a tuber and not a “nut” so considered quite safe for those with nut allergies (Dr.Axe Food and Medicine).
Uses and benefits
Can be chewed fresh or in dried raw form. Tiger nut milk is popular in West Africa where is drank as Kunu Aya and in Valencia region of Spain as main ingredient of horchata de chufa, a sweet, milk-like beverage. Benefits include:
